The signature

Five days, one bread.

We discovered it in Australia. We brought it back to Carpentras. It's a sourdough bread, low in gluten, that takes five days from the first fermentation to the oven. Not a day less. We pull it out on Saturday morning, and only on Saturday. When it's gone, it's gone.

A homemade dish of the day, right at noon.

Gratin dauphinois, lasagne, lentils with sausages… It changes every day, cooked like at home. Takeaway, or on the veranda.

Bolognese simmered for 4 hours, house béchamel, fresh pasta sheets. A family classic.
